I don’t know why I picked the time slot I did, but my oldest daughter, Leah, has ballet at 5pm on Tuesdays. Worst time ever. Eating dinner before ballet would be way too early, and making/eating dinner afterwards would mean almost 7pm, which is sooo late for us. I realize this is probably standard operating procedure for people with active kids in sports and lessons, and its not big deal. But she’s my first kid. This is new territory for us.
The first week, we picked up Taco Tuesday on the way home (Del Taco is dangerously close to my house, and who can resist 3 tacos for 99 cents?). The next week, I asked my husband to make his skillet BBQ chicken while Leah and I were gone, which was good, but made me feel guilty for having him rush in and cook dinner after working all day.
But this past Tuesday, I had a plan. I saw these Slow Cooker Chicken Caesar Sandwiches on the Rachel Schultz blog and thought they looked delish, and when I actually checked out the recipe, I saw how freaking easy they were. Stuff went into the crock pot after lunch, then chopped up the lettuce and shredded the chicken right before we left for class, and then assembled them within 15 minutes of getting home. They were SO good. My 5 year old ate three of them and said that they were “alicious, mom!” (its too cute, I can’t correct her on that one yet.) The husband agreed, and they were a snap to assemble when I walked in the door. I had to adapt them a little bit to what we had on hand and what else I thought it needed, and this is what I came up with.
Chicken Caesar Wraps (adapted from Rachel Schultz)
4 chicken breasts (or 7-8 tenders)
1 c water
1 c bottled Caesar dressing (I used Cardini’s)
1 head romaine lettuce, chopped
tortillas (the kind you cook yourself. Or pitas would be yummy too)
shredded Parmesan cheese
toasted almond slices (optional, you could use crushed croutons too)
-put chicken and water in crock-pot and cook on low 4-6 hours
-then take chicken out and shred it, toss most of the water
-return chicken to crock pot and add Caesar dressing and stir. Let cook for another 30-60 mins
-cook tortillas, and then layer lettuce, chicken mixture, sprinkle of Parmesan and almonds, and wrap up.
